Cool maritime breezes temper warm, dry days throughout the growing season, allowing the grapes to hang on the vine well into September and October. This produces excellent fruit with balanced acids and rich, concentrated flavors. . The resulting Chardonnay grapes show a natural plumpness and vibrant personality.WinemakingFor this wine, we used 100 percent Chardonnay, which we fermented in stainless steel to retain the vibrant fruit nature. Malolactic fermentation and sur lie aging rounded out the body and added texture.
